Ingredients
12 corn tortillas
2 cups enchilada sauce (red chile sauce)
2 cups shredded Cacique cheese (Queso Fresco or Oaxaca)
½ cup Cacique Crema Mexicana ​
¼ cup diced white onion ​
Tapatío Hot Sauce (to taste)
2 tbsp oil
Directions

1. Heat enchilada sauce in a saucepan over medium heat. ​

2. Lightly fry tortillas in oil (5–10 seconds per side) to soften. ​

3. Coat each tortilla in the warm enchilada sauce. ​

4. Add Cacique cheese, roll tightly, and place seam-side down in a baking dish. ​

5. Pour remaining sauce over enchiladas and top with more cheese. ​

6. Bake at 375°F for 15–20 minutes until melted and bubbly. ​

7. Top with Cacique crema, diced onion, and a drizzle of Tapatío for heat.​
